L’Atelier Rayan Néhmé review: our verdict
Everything is beautiful at Rayan Néhmé's: cakes dressed like jewels, perfect-braided pastries, and very successful packaging. The pastry chef upholds a demanding line, using sought-after ingredients and keeping sugar in the background, and when an idea works, it really works: the Emma-Rose raspberry, hazelnut flower, and chocolate tart are his most striking successes.
The shop on Boulevard Abderrahim Bouabid, in the Maarif, is aimed at lovers of author pastry, those who prefer nuance over plain sweetness and are willing to pay to try. Others risk disappointment: several cakes lack flavor behind their appearance, and the welcome can be distant. Another surprising detail at this price: neither names nor prices are displayed; you must ask the saleswomen.
The dish to order: the Emma-Rose raspberry. The trap: the pastries, laminated to perfection but soft and without butter flavor in the mouth, whether pistachio or almond. The good slot: the afternoon, the only opening time, from noon to 6:15 PM.
