Rue Moulay Ali, in Guéliz, you push open a door with no sign and go down: Baromètre hides in the basement, behind a counter lined with jars of herbs that give it the air of an old pharmacy. The cocktail menu draws on Moroccan spices, and the team prepares its own syrups, bitters, and liqueurs. The glasses arrive with a touch of staging.
Dim lighting, tight space, mixologists who explain what they're pouring: the place suits intimate tête-à-têtes as well as a small group of curious friends. The kitchen follows the same thread, Mediterranean with local accents, on plates designed to accompany the drinks and easy to share. Many come for an apéro and end up staying for dinner. The best spot remains the counter, front and center. The house also offers mixology introductory classes.
À savoir: cocktails are not included, even though they are served generously, and the room is small, so book ahead. Open at 6:30 pm on weekdays, 6 pm on weekends, until 1 am. An address to keep for evenings when you want to be surprised by what you drink.
