Dar Roumana review: our verdict
You won't stumble upon Dar Roumana by chance: the house hides near Bab Guissa, at the end of narrow alleyways where it's easy to get lost, and offers to send someone to pick up guests from their hotel, including a minibus upon request. At the end of the path lies a sumptuous riad and a kitchen that blends Moroccan flavors with French accents, refined yet not stingy.
The service, marked by great kindness, knows how to guide diners through a menu that mixes tradition and modernity. You come here for dinner to mark a stay in Fès, for a birthday, or for a drink at sunset on the terrace overlooking the medina. Not for a quick meal between two souks: here, you book and take the evening.
The insider tip: ask to be driven from your hotel when you make a reservation. The best time slot: pre-dinner, to climb onto the terrace as the sun sets.
