ENSO review: our verdict
In Casablanca, there is a lot of sushi and not much Japanese cuisine. ENSO is one of the exceptions: clean sashimi, remarkable fatty tuna, charcoal-grilled nigiri before serving, and a donburi with fatty tuna belly for enthusiasts. To let yourself be guided, the omakase unfolds the best of the menu, with fresh and sought-after products.
The setting is beautiful, the service is flawless, and the music has been lowered to let the tables speak. On the cooking side, it is more uneven: successfully slow-cooked shiitakes and egg, and a yuzu-spiked chocolate mousse to discover, but some dishes come out too salty or too greasy. This is the address for a dinner for raw fish lovers, a somewhat sharp tête-à-tête, at the Petit Rocher complex. It is not the place for those seeking generous sauced makis: here, the product comes before the garnish.
The dish to order: the sashimi and the fatty tuna, in braised nigiri or donburi. The trap: multiplying cooked dishes, less regular than the raw. The good slot: dinner, from 8 pm, to take the time of the omakase; closed on Sundays.
